1. Let's start simply. Grab your favorite selection tool (the Lasso works fine for our purposes), and select a part of your image. It doesn't have to be neat -- we're just experimenting here. Check out your Layers palette (it'll be on the lower-right part of your screen, unless you've moved it). Note that there is only one layer, by default called Background. It is highlighted because it's selected automatically, and for now it's the only layer that we have.
